After all this years you were the biggest fan of this salad and always filleted my oranges, when I prepared the carpaccio. I really recommend it to everyone who loves simple yet fancy salad variations. Especially in the summer time!
What you need (for ca 2 persons):
- 1 florence fennel
- 1 orange
- 2 rods of celery
- Olive oil & Balsamico (if you have Crema di Balsamico)
- Fleur de Sel & fresh pepper
- (if you like: walnuts)
What you do:
First you cut the florence fennel in very (!) thin slices. If you have a bread slicing machine, youse it. Then you fillet the oranges. Cut the rods of celery in small pieces and arrange them, together with the orange filltes on the fennel carpaccio. Put some olive oil and Balsamico (if you use Crema di Balsamico, put it in the very end) on top together with some del and fresh pepper.
