This recipe is from my friend and fellow student Bea.

My friend Bea is not only a great friend and fellow student to work with but also an inspiring cook with the bravery to try unusual yet easy to handle ingredients as well as low-carb alternatives. I am happy to present her „Quiona Salad“ along with some personal remarcs from her!


„Being a student makes it hard to prepare full meals everyday. I love to eat at home and prepare my own meals since I´m not a big fan of fast food chains. I like to make salads, and recently I’ve been switching to healthier nutrition options, such as quinoa instead of rice or pasta, of fish instead or red meats.“ – BEA


What do you need? 

For the salad:

  • Quinoa (1 cup uncooked)
  • 1 mozzarella
  • A hand full of cherry tomatoes
  • Some coriander

For the dressing:

  • Half a lemon
  • Salt & fresh pepper
  • Olive oil
  • Balsamic

What do you do?

First of all, you have to put water and the quinoa together in a pan. Then you heat it up, until it starts to boil. Now you should cover the pan and turn down the heat of your stove, thus it can simmer down until all the liquid is gone. When this has happened, remove the pan from your stove and shake up the cooked quinoa with a fork. After that, you can start cutting the cherry tomatoes in half, while you also prepare the mozzarella as well as the coriander. Finally, put all ingredients in a bowl and mix them together.

Now sit back, relax and enjoy this tasty dish!
