SPINACH SALAD WITH CRISPY GOAT CHEESE

This is for Lucas from Wine Genius.

Fancy Food comes along best with exquisite wine and good company – that is the perfect harmony for me to celebrate an ideal meal. Lucas is Co-founder & CEO of the Wine start-up Wine Genius, where you can buy high sophisticated wines from all around the world but of course also those of our beloved Rheingau. So basically Lucas brought the wine (Riesling) and I prepared the food – but together we made the perfect combination for what you need to enjoy the perfect summer dish. In the following I would like to introduce to you to my Spinach Salad with Crispy Goat Cheese and why we choosed the Riesling Herrnsheimer Schloß (of winery Neumer) to be the best friend and companion of this romantic dish. So what do you need?

  • 1 bag of fresh spinach salad
  • 2 goat cheeses
  • 3 table spoons of Honey (2 for the cheese, 1 for the dressing)
  • 2 packages of bacon
  • 2 pears
  • A bunch of cultivated radish
  • Mustard
  • Fleur de Sel & fresh pepper
  • Walnuts
  • Butter & Olive oil
  • Balsamic Vinegar
  • 4-5 figs
  • 1 red radicchio
  • Cranberry juice
  • 1-2 bottles of Riesling „Herrnsheimer Schloss“

What wine suits to this?

Lucas proposed to enjoy their Riesling for my salad to have the perfect taste marriage of aromas.

Riesling „Herrnsheimer Schloss“ is a very refreshing summer wine. Fruity flavors of peaches, citrus fruits, and mirabelle are combined with a distinct minerality, which creates a fantastic balance of the aromas of this premium Riesling. The pear in the salad is perfectly aligned with the fruity flavors of the wine. At the same time, it mildens the light spiciness of the dressing without dominating it. The Riesling’s minerality provides a perfect base for the bacon-wrapped goat cheese and holds the different ingredients together very elegantly.

What do you do?

Peel and cut the pears into slides (or pieces, as you prefer), as well as the radish & the raddichio. Wash & prepare the spinach salad and begin with the dressing. Here you simply adjust Olive oil, 1 table-spoon of honey, 1 table-spoon of mustard, 1 table-spoon of balsamic vinegar, 1 tablespoon of cranberry juice and mix it all together with salt and fresh pepper.

Now you apply some honey, Fleur de Sel & fresh pepper on the goat cheese, wrap in into Bacon (rule of thumb: Wrap the cheese in so many bacon slices till you don´t see the cheese anymore!) and fry it. They roughly take from 10-15 minutes, let them fry slowly so the cheese has time to melt in its new trendy coat of bacon. Now hackle the walnuts, fry them in butter & a pinch of Fleur de Sel and deglaze everything with one table-spoon of honey till they´re roasted and hot.

When the spinach is washed and dried, arrange the salad so it pleasents the eye with all the ingredients I mentioned above. Now you add the dressing, the warm fried salty-sweet walnuts, the baked goat cheese, some pepper and the figs (cut them into halves) on a plate.  Don´t forget to enjoy it with a fruity Riesling which is perfect for warm days, fruity salads and the most important: Nice people to share your food, time and conversations with!

So basically we just sat outside in our courtyard on the bottom, as we needed nothing more than us, our wine, our food and the sun shining for the moment. As I said in my „About me“ category, cooking along just stops your hunger, but cooking for or even with others makes you  happy.

Get outside, grab your friends, buy some wine and cook together –

Life is too short and to beautiful not to be enjoyed everytime possible with as much as you can do for it.
