CRETAN SALAD BY CLOTHILDE

I met Clothilde per coincidence over a learning group for L´Oréal Brand Storm 2014. I barely knew her name before and now we we´re in the toughest group of the semester, meeting up sometimes every day for hours learning, fighting and inspiring each other. During that time I soon realized Clothilde is unique – her sports, her attitude towards life, her eyes that magically change the color according to the sunlight, her clothing style – Clothilde impressed me by being different and authentic. She was one of the first persons I showed my blog and she always gave me an honest feedback. I wish there were more people out there like you Clo!

So I tried her Cretan Salad at a picnic she arranged on the „Oestricher Kran“ and it was really super delicious! So now let me introduce you Clothilde and her own interpretation of the Cretan Salad in the following lines.

„My own interpretation of a Cretan salad. This is a perfect salad to prepare in advance for a pique nique and to share with a lot of people. Definitely the kind of cooking that is good when prepared in large quantity.“ – Clothilde

What do you need?

  • dried bread, old bread – preferably with cereals or a dark ones
  • 4 or 5 red tomatoes – some yellow tomatoes (to bring a stronger and sweeter taste)
  • 100 to 200 gram of dried tomatoes (according to your taste)
  • 1 paprika (I like to use an orange one to add another color to the salad)
  • 400 gram of feta
  • 400 gram of mozzarella
  • basil
  • olive oil (premium one, that is the ingredient which makes the recipe tasty)

Slice the red tomatoes and the cheeses. Make thin slices of the paprika, dried tomatoes and the basil. Break the bread into small pieces. Cut the yellow tomatoes or not depending on your own taste. Put everything in a large bowl and sprinkle generously (I’d even say heavily – dish need to be fat to be tasty and the bread must absorb the olive oil to become soft) olive oil. Add some basil leaves on the top for decoration and put in the fridge at least 2 to 3 hours.

P.S. no need to put extra salt the feta is already quite salty, only if you really like it then you can put some crystals of salt.
