It’s too hot right now! 39 degrees (which is like 102.2 fahrenheit) in Vienna and a broken fridge were a challenge this summer. I hope you are doing better? If you need refreshing and easy food, this is the post for you! So life hacks to survive this summer.
→ NUMBER 1: GAZPACHO
Gazpacho is a cold spanish tomato soup with vegetables and woycester sauce. When you are vegan or vegetarian you should check out which woycester sauce is with or without anchovies. In the end, you just have to blend all vegetables together, season is – that’s it.
→ NUMBER 2: SPINACH SALAD WITH CRISPY GOAT CHEESE
This salad is fresh, sweet and salty at the same time. It goes perfect with Riesling and I advise you to try out the Wine from WineGenius. If you are vegan you have to leave the following ingredients out: Bacon, goat cheese and honey. The honey however you can substitute with agave syrup.
→ NUMBER 3: SCALLOPS IN WHITE WINE SAUCE
Fish is the perfect for warm summer days on the beach and healthy as well. If you want to be creative and impress your friends try out this high-quality dish with safran, scallops and sweet potatoes.
→ NUMBER 4: CAPRESE
Awesome food doesn’t have to be complicated. A fresh, easy and not expensive dish is the traditional italian caprese in the national colors green, red and white. Use room-temperatured tomatoes and buffalo mozzarella and always high qualitative extra vergine olive oil in a dark bottle.
→ NUMBER 5: SPAGHETTINI WITH CRAWFISH
I prefer Spaghettini over Spaghetti and this as scampi and tomatoes are always the answer this not-so-heavy sauce with white wine and parmesan is supper yummy.
→ NUMBER 6: CRETAN SALAD BY CLOTHILDE
This salad by my friend Clothilde is crispy (bread), fresh (tomatoes & basil) and super delicious. Olive oil, cheese and herbs make this salad the perfect partner in crime for BBQs or picnics. Try it out!
→ NUMBER 7 : COCKTAILS
Be creative! Pimm’s cup No 1, prosecco & co are you best friend this summer. Hugo & Aperol are awesome, but did you ever try a violet or cucumber secco? Just buy the syrup, peppermint, lemon and some prosecco and try, try, try!
→ NUMBER 8: BRUSCHETTA & CROSTINI
→ NUMBER 9: BEEF & TUNA TARTAR
Self-made tartar is easier than it sounds: Check out the ingredients on the link above and mix it all together. If you prefer fish, just take tuna filet and be a little brave. You can serve it on/with bread or just enjoy it plain. Yummy!
→ NUMBER 10: SALAD WITH DUCK & LEMON DRESSING
This salad has crispy, caramelized and salty walnuts and a fresh component with its lemon dressing. The roasted duck with orange filets complements the salad in a perfect way!
